I don't know where this recipe originated from other than my cousin Kathy Zekoll used to make it all the time and everyone always loved it!

Ingredients For zucchini pie

  • 1 1/4 c
    bisquick
  • 3 c
    raw zucchini sliced thin or coarse grated
  • 4
    eggs
  • 1/2 c
    chopped onion
  • 3 sprig
    parsley - minced
  • 1/2 c
    grated cheese (i use cheddar & swiss mix)
  • 1/2 c
    oil (i prefer to use coconut oil)
  • salt and pepper to taste

How To Make zucchini pie

  • 1
    Preheat oven to 325 and grease your pie plate.

    In a large mixing bowl combine all ingredients together. Pour mixture into your greased pie plate.

    Bake at 325 degrees for 45 minutes or until golden brown.
