I don't know where this recipe originated from other than my cousin Kathy Zekoll used to make it all the time and everyone always loved it!

Ingredients For zucchini pie

1 1/4 cbisquick
-
3 craw zucchini sliced thin or coarse grated
-
4eggs
-
1/2 cchopped onion
-
3 sprigparsley - minced
-
1/2 cgrated cheese (i use cheddar & swiss mix)

1/2 coil (i prefer to use coconut oil)

salt and pepper to taste
How To Make zucchini pie

1Preheat oven to 325 and grease your pie plate.

2In a large mixing bowl combine all ingredients together. Pour mixture into your greased pie plate.

3Bake at 325 degrees for 45 minutes or until golden brown.
