This was my Mother-in-law's recipe. . .that my Hubby loves. . .oh how I miss her!!! It looks like a a cream pie, but much more healthy. . . .VERY YUMMY!!! One of our favorites!

Ingredients For zucchini pie

1 czucchini, peeled & cooked (measure after cooking)

1 csugar
-
1egg
-
1 1/2 tspvanilla extract
-
4 Tbspflour
-
1 ccarnation evaporated milk or milnot
-
1unbaked pie shell
-
cinnamon or nutmeg
How To Make zucchini pie

1Blend ingredients in food processor & pour into unbaked pie shell.

2Bake at 450 degrees for 10 minutes, then turn down to 350 degrees for 15 minutes until solid & knife comes out clean.

3Sprinkle nutmeg OR cinnamon (whichever is to your liking) on top while cooling.
