This was my step father Bobby's absolute favorite pie, and we lost him to cancer in 2009. He loved it so much I had to make two; one being just for him! I still make it as it brings a 'little bit of Bobby' back to the table. I dedicate this recipe to him. RIP Bobby John Love

Ingredients For white mountain pie

8 ozsoftened cream cheese

1 cpowdered sugar (can sub w/ splenda)

15 ozcan crushed pineapple-drained well.

1 tspvanilla extract

1crt cool whip
-
1/4 cchopped nuts
-
19" graham cracker crust
How To Make white mountain pie

1In mixing bowl, beat cream cheese, sugar, and vanilla.

2Fold in cool whip until mixed well. Then fold in drained pineapple and nuts(opt).

3Spread into pie crust. Cover and refridgerate at least 1-2 hours before serving. Best if refridgerated overnight!
