    washed lemons
  • 1/4 tsp
    salt
  • 2 c
    sugar
  • 5
    eggs
  • double pie crust

    cut off ends of lemons.place on a cutting board to catch juice. slice into paper thin slices, remove any seeds

    combine lemon slices, juice and sugar. let stand 2 hours at room temperature

    beat eggs with salt and add to lemon mixture

    put in pastry shell

    cover with top crust, seal and slit

    bake first 15 minutes 425 degrees

    turn heat down to 350 degrees, bake additional 30 to 40 minutes
