This is an old time recipe that was in my 68 year old husband's grandmother's recipe box. Her kids had her recipe box in the pile to go to the trash! Horrors!!! I salvaged it and often make things for my husband just so he stays connected to his Grandma.

Ingredients For tina's mock macaroon pie

  • 1 c
    sugar
  • 3/4 c
    crushed soda crackers
  • 1/2 c
    chopped nuts
  • 4
    egg white, room temp
  • 12
    dates
  • 1 tsp
    vanilla
  • 1/2 tsp
    coconut extract
  • 1 tsp
    baking powder
  • pinch
    salt

How To Make tina's mock macaroon pie

  • 1
    Beat egg whites while adding the sugar slowly until stiff. Add vanilla and coconut extract and beat an additional minute.

    Toss the baking powder and a pinch of salt with the cracker crumbs. Chop dates and add along with nuts to crumb mixture

    Fold in to egg whites and mound into a well greased pie pan. Bake 20-30 minutes at 350 degrees
