thrice spice pumpkin pie
I needed a great tasting, quick and easy pumpkin pie recipe that I could customize to accommodate family members with specific dietary requirements (i.e. dairy and gluten-free,) so this is what I came up with. Don't be afraid to try new combinations of ingredients to meet your taste and needs. You can try sugar free or low-fat combinations, or even a chocolate graham cracker crust. I used a gluten-free graham cracker crust and extra creamy oat milk and everyone loved it! I hope this quick & easy, no-bake dish will become a new Go-To recipe for you, too!

Ingredients For thrice spice pumpkin pie
- CUSTOMIZABLE INGREDIENTS

1graham cracker pie crust (your choice - reduced fat, gluten-free, etc.)

1 cmilk (your choice - whole, 2%, extra creamy oat, soy, etc.)

1 box5.1 oz. vanilla instant pudding (6 serving - regular, sugar-free, etc.)
-
1/8 tspground cloves
-
1/4 tspground ginger
-
1/2 tspground cinnamon
-
1 can15oz - 100% pure pumpkin (i prefer libby's)

1tub cool whip (your choice - regular, sugar-free, etc.)

Extrawhipped topping for garnish
- *NOTE* - I PREFER USING THE 3 ACTUAL SPICES. HOWEVER, YOU CAN SUBSTITUTE 1 TSP. OF PUMPKIN PIE SPICE, JUST NOT BOTH.
How To Make thrice spice pumpkin pie

1Into large bowl, add milk, instant pudding mix and 3 spices.

2Mix completely using either mixer on low (about 20 seconds) or whisk by hand (about 1 minute.)

3Next, add the pumpkin and mix until blended with previous mixture.

4Using scraper spatula, add Cool Whip to bowl, folding together only until no streaks of pumpkin or Cool Whip are showing. At this step, it is important NOT TO STIR, ONLY FOLD. Stirring breaks down the topping and makes your pie flat instead of fluffy.

5Using scraper spatula, add pumpkin mixture to the graham cracker crust. You can use the scraper to make swirls or smooth evenly across the top of the pie.

6Refrigerate overnight or for at least 4 hours to fully set.

7Decorate top of pie before serving with additional whipped topping (spray can or tub, extra-creamy, sugar-free, low-fat, etc.)

8TIP - Save plastic cover from pie crust. Remove label and glue dots, then wash and dry completely. Invert plastic lid and add to pie so it will act as a dome to protect your pie.
