I went to our local patch this past weekend and let me tell ya it was slim pickins this year. They didn't have my fav squash that I like to make pie's with so I will have to go on a search next weekend. They did have sweet potatoes so thats what I had to play with this weekend. Enjoy!!! My family like's pumpkin and sweet potato pie to be a litte more thicker in consistency than most other's so if you like a more wet pie just increase the half and half to 1/2 a cup.

Ingredients For sweet potato pie

2 lgsweet potatoes

1/4 stickbutter, softened

3/4 csplenda or sugar

1 lgegg

1/4 chalf and half

1 tspvanilla extract

1 tspcinnamon
How To Make sweet potato pie

1Preheat oven to 350.

2Bake sweet potatoes until tender about a hour, let cool until you can handle them.

3Cut potatoes in half and scoop out pulp place into a mixing bowl (I use a kitchen aid) add butter and beat on med high until creamy, add all the other ingredients and beat on med speed until mixed well.

4Spread into unbaked pie shell and bake at 350 for 50 to 60 minutes middle should start to turn golden brown.
