Sweet potato pie shows up at lots of Texas barbecues! This recipe comes from Barbecue Crossroads by Walsh NOTE: I used a ready made 9" pecan crust. It looked kind of small, so I used 2 c. sweet potatoes, 3/4 c brown sugar, 2 eggs, 3/4 c. evaporated milk, about 6 T of butter and a little bit less spices. It worked!

Ingredients For sweet potato pie

1unbaked pie shell (buy or make your own)

3 cbaked, peeled, mashed sweet potato

1/2 cbutter, softened

1 cbrown sugar, packed

3eggs

1/4 tspsalt

1/2 tspvanilla

1/2 tspcinnamon

1/8 tspground cloves
-
1/4 tspginger
-
1/8 tspnutmeg

1/4 tspallspice

1 cevaporated milk
How To Make sweet potato pie

1preheat oven to 350ºF. Cream butter and brown sugar, beat eggs and add to mixture.

2Stir in salt, vanilla and spices.

3Add sweet potatoes and evaporated milk and beat with electric mixer until smooth. Pour into pie shell and bake about 1 hour, until center is firm.
