If you are familiar with Chinese steamed buns filled with red bean paste, you will delight in this pie. During my time learning to speak Chinese in school, I worked in a Asian food mart/Chinese restaurant. That is where I fell in love with it. This is an American rendition of an Asian favorite.

Ingredients For sweet azuki bean pie

1 lbazuki beans

1/2 cbutter, unsalted, room temperature

2eggs

1/2 csugar

1/2 cdark brown sugar

1/2 ccream or whole milk

1/2 tspcinnamon

1/2 tspallspice

1/2 tspginger

1 Tbspvanilla

How To Make sweet azuki bean pie

1Boil beans until soft. Rinse.

2Preheat oven to 350.

3Place bean in food processor or blender with butter. Blend until smooth.

4Add other ingredients, blend for an additional minute.
