super easy & tasty icebox pie

I remember an extended family member taught my mom and I this recipe when I was in high school. The woman refused to tell us the ingredients until after we tasted the pie. We tried and loved this airy, sweet & tangy pie but we were then surprised to then learn that the key ingredient was yogurt! You can customize this recipe by using your favorite yogurt flavor, Cool Whip and graham cracker crust of your choice. You may choose to use a gluten-free, reduced fat or even a chocolate graham cracker crust, depending on your taste preferences and dietary needs. Cool Whip comes in a variety, too.

Ingredients For super easy & tasty icebox pie

  • PIE CRUST
  • 1
    graham cracker pie crust (your choice; save plastic liner)
  • PIE MIXTURE
  • 1
    8 oz. tub - cool whip
  • 2
    6 oz. containers any flavor blended yogurt (the kind without the fruit in the bottom)
  • NOTE - YOGURT MUST NOT HAVE LIQUIDY FRUIT ADDED. THE FIRMER THE YOGURT, THE BETTER.

  • Add flavored yogurt and Cool Whip to large mixing bowl

    In large bowl, start with Cool Whip and then add both containers of flavored yogurt. Fold together but DO NOT STIR! Stirring will break down the Cool Whip causing the pie to lose its fluffy consistency and become flat. Stop folding when the mixture is a uniform color.
  • Folded yogurt and Cool Whip

    Spoon mixture into prepared graham cracker crust. You can smooth over evenly across the top or make attractive swirls. For an added flair, you can decorate the edges of the pie with piped Cool Whip or spray (canned) whipped topping. Just a dollop on top works great, too!
  • Finished pie (without whipped cream decoration and without the dome cover.

    Refrigerate pie for at least 4 hours to set, but preferably overnight.

    *TIPS* It's crucial that you DO NOT use yogurt that has fruit in the bottom. The liquid prevents the pie from being fluffy. I recommend saving the plastic liner from your pie crust. If you remove the label & glue dots, then wash and dry it thoroughly, you can invert it to use as a domed cover to help protect your pie.
