Can't believe how good this is and it's gluten free and low carb!! So easy to put together too!! Flavor was even better on the second day! I don't know about a third day.. this didn't survive that long!

Ingredients For strawberry white chocolate mousse pie -- low carb
- CRUST:

1 1/2 calmond flour
-
3 Tbspbutter, melted
-
1 Tbspground flax seed
-
2 Tbspstevia in the raw
- PIE FILLING:

90 gsliced fresh strawberries (about 8 berries)

1 boxsugar free white chocolate instant pudding mix (1 oz)

1 cmilk
-
6 ozcool whip
How To Make strawberry white chocolate mousse pie -- low carb

1Heat oven to 350 F. Melt the butter and mix the ingredients for the crust up in the pan and press into place with your fingertips.

2Bake for about 10 minutes until the crust is beginning to brown. After 8 minutes, check every minute or so, because once it starts to brown it goes quickly. Allow to cool completely.

3Slice strawberries thin and spread in bottom of cooled crust.

4In a mixing bowl, combine pudding mix and milk until thickened. Fold in cool whip until well blended. Spread over strawberries in pie plate. Chill until ready to serve.
