This is such a cool summer time dessert for strawberry lovers. It's great for a potluck or for the family. I've had the recipe for years and made it quite a lot when my children were growing up. I have since started using light ingredients when I can.

Ingredients For strawberry delight

  • crust:
  • 1 c
    chopped pecans
  • 1 c
    flour
  • 1
    stick melted butter (i use smart balance)
  • 2 Tbsp
    sugar or sweetner
  • 2nd layer:
  • 8 oz
    softened lite cream cheese
  • 9 oz
    cool whip or 2 pkgs. dream whip
  • 1/2
    box confectioners' sugar, sifted
  • 3rd layer:
  • 1
    pkg. strawberry glaze (i use sugar free)
  • strawberries, sliced or chopped, sweeten to your taste with sugar or splenda

How To Make strawberry delight

    Preheat oven to 325 degrees. Spray 9x13 pan with cooking spray. Mix crust ingredients well and pat into baking dish. It will be a thin crust. Bake 20 minutes. Cool completely. Mix 2nd layers' ingredients by mixing cream cheese with confectioners' sugar with a mixer until smooth. Fold in whipped topping with a spatula or spoon. In another bowl mix strawberry glaze with sweetened strawberries. Spread cream cheese mixture over crust. Top with strawberry mixture, spread evenly. Cover and refrigerate.
