A real treat for my husband. He loves pecan pie, but this one runs a close second. Sticky, ewey gooey goodness!

Ingredients For ~ sticky oatmeal coconut pie ~

  • 1/4 c
    cold butter, sliced thin
  • 1 c
    sugar
  • 2
    eggs
  • 1 tsp
    vanilla extract
  • 1 c
    each - light corn syrup, sweetened coconut and quick oats or old fashioned - have used both
  • 1/2 c
    water
  • 1/2 tsp
    salt
  • 1 - 9
    inch unbaked pie crust

How To Make ~ sticky oatmeal coconut pie ~

    Using my kitchen aid mixer, I cream together the butter and sugar, until fluffy.

    Add remaining ingredients, beat until thoroughly combined.

    Pour into prepared crust. Bake at 400 degree F for 10 minutes, then reduce oven to 350. Continue baking for 35 to 40 minutes or until filling is just slightly jiggly. Remove from oven and cool on rack.

    Serve with or without ice cream.
