My sis-in-law, Karen, who is from Georgia swears by this yummy pie and I have to agree it is special. Just remember to only use Vidalia onions!! I'm actually surprised she gave me the recipe, it's been her secret recipe for awhile:) She must love me, lol.

Ingredients For southern cracker-onion pie

  • 1 c
    crushed saltine crackers
  • 2/3 c
    melted butter, divided
  • 2 lg
    vidalia onions, thinly sliced
  • 4
    eggs
  • 1 c
    2% milk
  • 1 tsp
    salt
  • 1/2 tsp
    pepper
  • 1/2 c
    shredded cheddar cheese

How To Make southern cracker-onion pie

    Heat oven to 350. Lightly spray a 9" pie pan w/ cooking spray. It's best to use a deep dish for this. In bowl, combine crushed crackers w/ 1/3 cup melted butter until crumbly. Press mix into bottom and up sides of pie pan.

    In lg skillet, over med-high heat, saute onions in remaining butter until tender, stirring often. Pour onions into pie crust.

    In another bowl, whisk together eggs, milk, salt and pepper. Pour over onions. Sprinkle cheese over top. Bake 45 mins or until center is set. You can cover w/ foil if cheese is browning too quick, but remove foil the last 10 mins. Cut into wedges.
