simple irish cream pie

I tried an alcohol-based cream pie on Valentine's Day. It was so delicious, I wanted to make one. I didn't have that alcohol available so I thought I would use Baileys Irish Cream. I hope everyone enjoys this pie.

Ingredients For simple irish cream pie

    chocolate sandwich cookies
  • 5 Tbsp
    butter, melted
  • 28
    jet puffed marshmallows
  • 1 can
    evaporated milk
  • 1/4 c
    Irish cream liqueur
  • 1 1/3 c
    heavy whipping cream

How To Make simple irish cream pie

    Place the sandwich cookies into a food processor and pulse until finely chopped. Place in a medium bowl and pour melted butter to coat the cookies. Press into a 9 or 10-inch pie plate. (Or buy an already made chocolate pie crust or other pie crust. A deep dish one will work great!)

    Using a double boiler, place marshmallows into the top pot with the can of evaporated milk. Bring boiler to a boil and melt the marshmallows completely. Remove double boiler from heat and take top pot off of boiler so it can cool quicker.

    Let this mixture cool completely. Once completely cooled, add the Irish cream (I use Baileys) and mix well. (For less boozy flavor, use 3 Tbsp; for a more boozy pie, use 6 Tbsp.)

    Whip the whipping cream in a stand mixer (if possible) until stiff peaks form. Fold the whipping cream into the cooled Baileys mixture. Then pour into pie crust. Let set in the refrigerator for at least 5 hours. (Better if can set overnight.)

    Top with crumbled chocolate sandwich cookies. Serve and Enjoy!
