I make this every Easter to welcome the spring. It's very easy to make and has a very refreshing taste.

Ingredients For sherry's easter strawberry pie

    9"-frozen deep dish pie shell, thawed
  • 1
    4-serving pkg, sugar-free strawberry flavored gelatin
  • 1/2 c
    sugar
  • 3 Tbsp
    cornstarch
  • 3/4 c
    diet gingerale
  • 1 qt
    fresh strawberries, hulled, cut in 1/2

How To Make sherry's easter strawberry pie

    Bake pie shell as directed, let cool. In medium saucepan, combine remaining ingredients, except strawberries.

    Place over medium heat. Cook, stirring, 5-7 mins, or until gelatin dissolves. remove from heat. Let cool 5 mins.

    Stir in strawberries. Pour mix into pie shell. Cover and chill at least 4 hrs. I always make this the night before, so it's already chilled.
