Got this recipe from a dear family friend, Virginia Haynes, years ago & it has been a favorite ever since. Hope it becomes yours too. This pie makes it's own crust & is super easy.

Ingredients For saltine cracker pie

  • 3
    egg whites
  • 1 c
    sugar
  • 1 tsp
    vanilla extract
  • 14
    saltine crackers
  • 3/4 c
    pecan pieces
  • 1 tsp
    baking powder
  • 1 tsp
    butter or marg.

How To Make saltine cracker pie

    Heat oven to 350 degrees .

    Butter a pie pan & set aside .
  • 3
    Crumble crackers very fine & put in a med mixing bowl. Add pecan pieces & baking powder . Stir to mix .

    Beat egg whites till stiff . Add sugar and vanilla & beat together

    Pour egg whites over cracker mixture & fold together until well mixed . Pour into pie pan & bake until golden brown & crusty . Cool completely .

    I top with whipping cream or have it on the side . Some of my family don't like whipped cream, go figure ! Lol
