My friend Sue gave me this recipe many years ago. It is so simple and oh so good. Sue uses a Mrs. Smith's frozen, deep dish pie shell for this pie. Of course you may use your own home made crust if you wish.

Ingredients For ricotta pie

  • 1
    mrs. smith's frozen deep dish pie shell
  • 2 lb
    ricotta cheese
  • 3/4 c
    sugar
  • 3
    eggs
  • 2 tsp
    anise or almond extract (i've always used almond)

How To Make ricotta pie

  • 1
    Warm the frozen pie shell in oven until "dry".
  • 2
    Mix all ingredients well.
  • 3
    Pour into pie shell.
  • 4
    Bake for 1 1/4 hours at 350 degrees.

    Remove from oven and allow to cool.
  • 6
    Refrigerate until chilled.
