My Husbands favorite pie and the recipe was given to me by a friend. I hope you enjoy it.

Ingredients For rhubarb custard pie

4+ cdiced rhubarb
-
1- 1/2 csugar
-
2- 1/2 Tbspflour

2eggs well beaten

1double pie crust
How To Make rhubarb custard pie

1Mix the sugar and flour together, add to rhubarb and mix well, add the two beaten eggs and mix well, put into pie pan and cover with second rolled crust. Bake at 400* 15 min turn down to 350* and bake until rhubarb bubbles and crust a nice brown. I use frozen rhubarb, so takes a little longer for pie to get done. Usually the rhubarb will bubble up where you have made the vents in the top crust.
