Back in the 80's I used to pic strawberries at Driver Strawberry Farms. One year they sold strawberry recipe books for a buck. It's called 100+Adventures In Strawberries. This is one of the recipes that I have made countless times. This is very similar to Shoney's Strawberry Pie. They have closed most of the Shoney's restaurants in my area but there are some still in business. I wonder if they still serve their famous strawberry pie.

Bake empty pie crust and cool completely. Wash, remove stems and slice the strawberries the desired size you want and set aside. Combine sugar, cornstarch and water. Bring to a rolling boil and then remove from heat. Cool for 10-15 minutes and then add in the gelatin and mix well.

Once the pie has been refrigerated for several hours cover with whipped cream or cool whip and keep refrigerated. This, of course, is optional. You can also put the topping on each individual slice once you plate it up. It's good without a topping.
