When my son was little he loved his Nama's sweet potato pie and they made a cookbook at her school and she named it RAUL'S SWEET POTATO PIE. And even now he is a young man and we still love this pie. Hope you enjoy it too!!

Ingredients For raul's sweet potato pie

  • 4 md
    sweet potatoes
  • 1 stick
    margarine
  • 1 1/2 c
    brown sugar
  • 1 c
    granulated sugar
  • 1/2 tsp
    salt
  • 1 tsp
    nutmeg
  • 1 tsp
    ginger
  • 11/2 tsp
    cinnamon
  • 4
    eggs
  • 1/2 c
    heavy cream
  • 2 tsp
    lemon extract
  • 1 tsp
    vanilla extract
  • 2
    deep dish pie shell

How To Make raul's sweet potato pie

    Boil sweet potatoes until well done. In a large bowl, combine 4 peeled potatoes, 1 stick margarine, 11/2 cups brown sugar, 1 cup granulated sugar and blend well.

    Add to mixture 1/2 tsp., salt, 1 tsp., nutmeg 1 tea., ginger and 11/2 tsp., cinnamon. Then add 4 eggs (slightly beaten) and 1/2 cup heavy cream. Blend well until smooth.

    Add 2 tsp., lemon extract and 1 tsp., vanilla extract. Pour equal amount of mixture into 2 deep dish frozen pie crust and bake at 350 for about 11/2 hours. Let cool (when done), slice and ENJOY!!!
