Love, love, love this recipe! It has everything... fall pumpkin spice flavors, cool creamy ice cream, graham cracker crust, whipped cream and a drizzle of caramel on top, if you choose... what's not to like? And, best of all, you can have it together in a matter of minutes without a grocery list the length of your arm of "special" ingredients to buy. One of my kids favorites from Thanksgiving through Christmas. A wonderful recipe to include your kids or grandkids in the preparation to make them feel like they contributed something for your Thanksgiving feast. Enjoy!

Ingredients For pumpkin pie ice cream pie (very easy)

  • 1 qt
    vanilla ice cream or frozen yogurt, softened until almost soupy
  • 1 c
    plain canned pumpkin (not pie filling)
  • 1/4 c
    sugar
  • 1/4 tsp
    cinnamon
  • 1/4 tsp
    ginger
  • 1
    graham cracker pie crust, ready-made

    As quick as 1,2,3 steps! Mix all ingredients by hand until incorporated.

    Pour into prepared graham cracker pie crust.

    Place in freezer to harden overnight. Done! Feel free to top with whipped cream, caramel ice cream topping, crushed Heath bars, whatever you enjoy. Guests always think that it's much more complicated than it is... it will be our little secret!
