This is another of Bisquick's impossible pies in "short form", "mini's". Just the right size for that buffet table. These delicious pies are quick and no-muss, no-fuss and turns out great every-time!

Ingredients For pumpkin pie mini's

1 c100% solid pure pumpkin

1/2 cbisquick
-
1/2 cbrown sugar,packed

1 tspcinnamon, ground

1/2 tspginger powder
-
1/4 tspclove, ground

3/4 cevaporated milk

1 tspvanilla extract
-
2 lgeggs
How To Make pumpkin pie mini's

1Heat oven to 375^. Spray 12 regular size muffin cups with cooking spray.

2In a medium bowl, stir all ingredients until blended. Pour 1/4 cup mixture into each muffin cup. Bake 30 minutes or until tops are golden brown and edges are starting to pull away from sides of pan.

3Cool 10 minutes in pan then loosen sides with a knife; remove from pan and place on wire rack to cool completely.Serve with a dollop of whipped cream on each mini pie, if desired.
