Cool and creamy, these pumpkin pie cheesecake bars are a delightful fall dessert. It truly tastes like a pumpkin pie cheesecake with a chocolate crust. Only it's much easier to make than a cheesecake. The filling is creamy and filled with pumpkin spice flavor. Serve the bars with a dollop of whipped cream and a dusting of cinnamon for a delicious treat. These would also make an easy holiday dessert.

Ingredients For pumpkin pie cheesecake bars

  • 1 c
    chocolate graham crackers crumbs
  • 2 1/2 Tbsp
    melted butter
  • 1 1/2 Tbsp
    light brown sugar
  • 2 pkg
    cream cheese (8 oz each)
  • 1/2 c
    sugar
  • 1/2 tsp
    vanilla extract
  • 2
    eggs, room temperature
  • 1-2 tsp
    pumpkin pie spice (depending on how much spice you like)
  • 1 tsp
    Kosher salt
  • 3/4 can
    canned pumpkin

How To Make pumpkin pie cheesecake bars

  • Crust ingredients in a bowl.

    Preheat oven to 325 F. In a small bowl, stir together the first 3 ingredients until combined.
  • Pressing crust into a baking dish.

    Press in the bottom of a parchment-lined 8x8 square baking dish. Bake for 8-10 mins to set.
  • Cream cheese, sugar, and extract in a stand mixture.

    Meanwhile, beat cream cheese, sugar, and extract in a stand mixer, at medium speed, until smooth.
  • Eggs, spices, and salt added to mixing bowl.

    Add eggs, spices, and salt. Continue beating until well combined.
  • Stirring in pumpkin.

    Add pumpkin, beating until everything comes together.
  • Pouring batter over the crust.

    Pour batter over crust.
  • Cheesecake bars baking in the oven.

    Bake for 40 minutes (be sure to watch it, so it doesn't brown on top). Once it's set, turn the oven off and leave the oven door closed for 15 mins.

    Remove and let cool completely on a wire rack. Cover and chill for 8 hrs or overnight.
