My sister Barbara, made me this recipe about 2 years ago and I was HOOKED!! If you like pumpkin, this is an AWESOMELY (is that a word? lol) DELICIOUS dessert. Well, you could eat it any time you want really. I have eaten for breakfast with a hot cup of coffee........WOW! Now THAT'S a breakfast of CHAMPIONS!!

Ingredients For pumpkin crunch

1-15 ozpumpkin
-
1 canevaporated milk
-
4eggs
-
1 tspnutmeg
-
1/2 tspginger
-
2 tspcinnamon
-
1/2 tspsalt

3/4 csugar

1 boxyellow cake mix
-
1/2 lb(2 sticks)melted butter
-
1 cchopped walnuts or nut of choice (optional)

whipped topping or vanilla ice cream
How To Make pumpkin crunch

1Mix first 8 ingredients together and pour into greased 9x13 inch pan.

2Sprinkle 1 box yellow cake mix over pumpkin mixture, then 1 cup chopped walnuts over cake mix.

3Then drizzle melted butter evenly over nuts and cake mix.

4Bake at 350 degrees for 50 to 60 minutes. Serve warm with a dollop of whipped topping or vanilla ice cream. ENJOY!
