This is a yummy pie topped with merinque! Whipped cream may be used for topping instead of meringue. Either topping is delicious!

Ingredients For pineapple pie

  • FILLING
  • 1 1/2 c
    crushed pineapple
  • 2
    egg yolks
  • 1 c
    sugar
  • 1 Tbsp
    cornstarch
  • 1 Tbsp
    flour
  • 1 Tbsp
    butter
  • CRUST
  • 1
    baked pie crust
  • MERINGUE
  • 2
    egg whites
  • 1 Tbsp
    sugar

How To Make pineapple pie

  • 1
    Blend cornstarch and flour into sugar
  • 2
    Beat egg yolks and add pineapple, juice and all to above mixture.
  • 3
    Cook in a double boiler until thick. Pour into baked pie crust.

    Whip egg whites stiff and add 1 tablespoon sugar. Put on pie and brown in oven. Cool, cut and enjoy!
