We had this at a church pot luck and my husband searched out who made it and got the recipe from her. It is fabulous

Ingredients For pineapple chess pie

120 oz can crushed pineapple, drained well

1 csugar

1 Tbspcornstarch

4eggs
-
1stick of butter (not margarine), melted

1 tspvanilla

1 ccoconut or to taste. if you like more add more
How To Make pineapple chess pie

1Beat eggs, sugar, cornstarch, butter and vanilla together. Add pineapple, blend then add coconut, blend well. Pour into pie shell. Bake 30-40 minutes, at 325 degrees. until a knife inserted the the center pulls clean.

2For a more done crust prebake 10-15 minutes
