This is hubby's favorie pie and when peaches come in season I make 2 a week just to keep up with demand LOL Enjoy Had to rename the pie LOL because when I do make it, it is Eric's Peach Pie :)

Ingredients For peach pie eric's
- FILLING

10peaches, fresh skined and sliced

1/3 cflour
-
1/2 csugar ( you can up to 1 cup of sugar depends on your taste for sweetness)

1/4 cbutter, cold cubed

1/2 tspcinnamon, ground

1/4 tspnutmeg,fresh ground
- CRUST
-
3 cpastry flour, whole wheat

1 1/2 tspsalt
-
3 Tbspsugar
-
1 cshortening, cold and cubed

1egg
-
1 tspvinegar, white distilled

5 Tbspcold water
How To Make peach pie eric's

1In large bowl combine flour, salt and sugar. Mix well, then cut in shortening until crumbly

2In small bowl combine egg, vinegar and 4 tablespoons of water whisk together and to flour mixture using a fork until dough forms a ball add 1 more tablespoon of water if needed

3let dough rest atleast 10 minutes in the refigerator before rolling out

4this makes 2 crusts

5For filling Place sliced peaches in a large bowl pour in sugar, flour and spices and mix well place mixture into a deep pastry lined pie plate and dot with cold butter and place top crust on top of the peaches and crimp cut 4 slits in the crust . Brush with egg wash and dust with cinnomon and sugar. Bake at 350 for 45 to 60 minutes until crust is golden brown.
