This wonderful recipe is from Gershuh's in Greenville, Ohio. This pie is so incredibly delicious and addictive! George Trittschuh, who was the owner of Gershuh's, says it is important how this pie is put together. Complete blending of the sugar and flour is essential. And, so is the flaky, from-scratch pie crust made with vegetable shortening. The baking instructions are a little imprecise because the restaurant used a convection oven. Traditional home ovens will use 350 degrees. I hope you enjoy this pie as much as my family and friends do! I think you will find that you will make this over and over again.

Preheat oven to 350 degrees. Mix the sugar with the flour until completely blended. Add the salt and whipping cream. Blend the half-and-half with the yolks only and stir into the sugar mixture; then add vanilla. It is important to just blend the mixture - do NOT beat it. Pour into an unbaked pie shell and sprinkle with cinnamon on top. Bake the pie until the filling is completely set when the pie is jiggled, or until it bubbles through for 1 minutes. Start checking after one hour.
