This is my old Amish neighbors recipe, tweaked by me. When I think of peanut butter pie, I want to taste peanut butter. The only peanut butter in the original recipe was in the crumbles! My tweaking turned out scrumptious and just the right amount, not overpowering! I let her try mine and she asked, " why didn't I think of that?" It's dangerously delicious, the best you'll ever tease the tastebuds with! I make two everytime I make, as someone always wants to take a piece to devour later! Try it, you'll see what I mean! :) Enjoy!

Ingredients For ~ addictive peanut butter pie ~

  • Pie crust
    pre baked, homemade is best, but this was too convenient at the time. i had leftover pudding. you should use a 9 inch deep dish plate is best
  • 4 c
    milk, divided
  • 1/2 c
    corn starch
  • 1 1/2 tsp
    vanilla extract
  • 3
    large egg yolks
  • 1 tsp
    salt
  • 1 Tbsp
    unsalted, butter
  • 3/4 c
    sugar
  • 1/2 c
    creamy peanut butter
  • PEANUT BUTTER CRUMBLE
  • 1 c
    confectioners' sugar
  • 1/2 c
    chunky peanut butter
  • 2 tsp
    cocoa powder
  • 2 - 3 c
    whipped cream

How To Make ~ addictive peanut butter pie ~

    In a med bowl, whisk together the eggs, 1 cup milk, salt, vanilla and corn starch. Set aside. This keeps you from having to temper eggs later.

    In a large saucepan, over med heat... bring 3 cups milk, butter and 3/4 cups sugar almost to boil, stirring constantly. Add the egg mixture and remain stirring until thick. Remove from heat and beat in 1/2 cup peanut butter, until thoroughly incorporated. Refrigerate to cool, stirring every so often.

    In the meantime, mix the peanut butter, confectioners' and cocoa until crumbly. Using fingers is easier. Set aside until needed.

    Once pudding is just lukewarm. Sprinkle half of peanut butter crumble on bottom of baked pie crust. Spread evenly. Spread peanut butter pudding over crumbles.

    Spread the top evenly with whipped cream and sprinkle top with remaining crumbles. Refrigerate for at least a few more hours to finish setting up pudding!
