Do you love apple pies but hate making a pie crust? Maybe you want to make a pie, but forgot to buy refrigerated pie crust. Maybe you're just "pie crust challenged". Even if you've never baked a pie before, this recipe is made for you. It's foolproof, easy and a total no brainer. Everyone can make a bakery quality apple pie with this simple recipe.

Ingredients For no brainer apple pie

  • 2 cups flour
  • 1 cup brown sugar
  • 3/4 cup butter or margarine, softened (i like to use country crock plant butter made with almond oil for all of my baking. see photo.)
  • 1/2 cup quick cooking oats
  • 2/3 cup white sugar
  • 3 tb cornstarch
  • 1 1/4 cups water
  • 3-3 1/2 cups peeled and cored baking apples, diced
  • 1 tsp vanilla
  • 1/2-1 tsp cinnamon (1 tsp will give you a deep cinnamon flavor.)
  • 1/4 tsp allspice
  • 1/8 tsp salt

How To Make no brainer apple pie

    Preheat oven to 350 degrees.

    Combine the first four ingredients. Mix with your hands until crumbly. Measure out 1 cup of crumbs and set aside for topping. Pat the rest into the bottom and sides of a 9" deep dish pie plate. Depending on your baking dish, you may not need them all.

    In a large deep saucepan, whisk sugar, cornstarch, water and salt until smooth. Bring to a gentle boil. Then, cook for one minute until thickened. Remove from heat and add apples, vanilla, cinnamon and allspice. Combine gently and pour into crust.

    Top with reserved crumbs.

    Take a piece of aluminum foil and lay it flat on top of the pie. Bake at 350 degrees for 45-55 minutes until apples are tender and crust is golden.
