We live on our boat and this is an excellent, easy recipe that everyone asks for. Since most of the blueberries aren't cooked, they pop in your mouth and taste so fresh! It also doesn't heat up your kitchen on a hot summer's day! Enjoy!

Ingredients For no-bake blueberry pie

3 ptblueberries

1 cwater
-
1lemon, zest and juice

1 csugar
-
3 Tbspcornstarch
-
pinchsalt

1 Tbspbutter

19-inch pie crust, baked
How To Make no-bake blueberry pie

1Mix sugar, cornstarch, salt and water in pan. Add 1 1/2 cups of blueberries with lemon zest and juice

2Cook and stir constantly over medium heat until thickened.

3Stir in butter and let cool.

4When cool, fold in remaining blueberries. Put in pie shell and refrigerate for approximately 2 hours or until set.
