This is a simple, quick recipe. It is very versatile- it can be used with any kind of berry. It doesn't use any gelatin or anything that would detract from the real taste of the fresh berries. This was the one recipe we used growing up when we wanted a berry pie, because you can't get any closer to the taste of fresh berries in a pie. When made with blueberries, they pop in your mouth and are still full of juice. Plus, because it doesn't require baking, there's no need to turn the oven on and heat up the kitchen. And it's so easy!

    baked pie shell
  • 3/4 c
    sugar
  • 3 Tbsp
    cornstarch
  • 1/4 tsp
    salt
  • 1 Tbsp
    butter
  • 1 Tbsp
    lemon juice
  • 1/4 c
    water
  • 4 c
    blueberries

How To Make no bake blueberry pie

    In a medium saucepan, combine the sugar, cornstarch, and salt. Add the water and 2 cups blueberries. Cook over medium heat, stirring until thickened and clear. Turn off the heat.

    Add the butter and lemon juice, and stir until just combined. Fold in the last 2 cups of blueberries.

    Pour into the pie crust, and chill until well set.
