I don't think many people make pineapple pie, but my mother (Mema to our children) made a delicious one. I'll just bet she made up the recipe herself. I'm blessed that I asked her for the recipe for this pie and her chocolate pie one day while we were working in our OTASCO store. She pulled out an envelope with the store logo on it and wrote down both for me. I still have the envelope!

Ingredients For my mother's pineapple pie

3/4 cgranulated sugar

1 pinchsalt

2 cmilk

5 Tbspsifted all-purpose flour

3egg yolks

1 tspvanilla extract

1 Tbspbutter

1large can well-drained crushed pineapple
How To Make my mother's pineapple pie

1Cook sugar, salt, milk, flour, and egg yolks in a double boiler until thick.

2Add vanilla, butter, and pineapple. Pour into a baked pie crust.

3Sometimes Mother made a meringue from the egg whites and browned the pie in the oven. In her later years, she used Cool Whip. Much easier and just as good!
