This recipe was developed for persons with nut allergies that would still love to have the taste of that good ol' southern pecan pie without the pecans. Even those I have served this too do not have any idea that the pecans are missing from this pie even my southern son-in-law. So, let's not tell!

Ingredients For mock pecan pie

  • 1/4 c
    butter or margarine
  • 1/2 c
    sugar
  • 1 c
    dark corn syrup
  • 1/4 tsp
    salt
  • 3
    eggs, well beaten
  • 1/2 c
    coconut
  • 1/2 c
    quick cooking oatmeal
  • 1
    unbaked 9" pie crust

How To Make mock pecan pie

  • 1
    Cream butter to soften. Add sugar gradually and cream till fluffy. Add syrup and salt. Beat well. Add eggs, one at a time, beating after each addition. Stir in coconut and oatmeal. Pour into pie shell. Bake at 350 for 50 minutes or until knife comes out clean. Cool before serving.
