Can't remember where I got this recipe but the best part is this meringue does not get "weepy."

Ingredients For miracle meringue

  • 1/2 c
    water
  • 1/4 c
    plus 2 tablespoons sugar
  • 1 Tbsp
    cornstarch
  • 3 or 4
    egg whites, room temp
  • 1 dash
    salt

How To Make miracle meringue

  • 1
    Combine water, sugar and cornstarch in a small saucepan. Stir well. Cook over medium heat stirring constantly until thickened and transparent.

    Beat egg whites and salt until foamy. Continue beating while gradually adding cooked mixture. Beat 3 minutes until stiff (not dry) peaks form. Do not overbeat.

    Spread over pie-sealing edges. Bake at 425 degrees for 5-7 minutes or until lightly browned.
