This is such an easy, light, pretty and delicious pie, using just a few ingredients. A good pie to celebrate with on St. Patrick's Day, as well as in the spring, Easter and Christmas. This is a light but rich pie. I like the cool mint flavor and a pretty green color. Since I am part Irish, St. Patrick's Day is one of my favorite times -with all the good dishes and celebrations. Happy St. Paddy's Day. I hope that you find a pot of gold at the end of the rainbow.

You are going to feel like the luckiest person in the world when you take your first bite of this no-bake pie. Light and fluffy with a hint of mint flavor, it's delicious. Each bite just melts in your mouth. We tried it with a chocolate pie crust and the flavor combination reminds us of Junior Mints! It's a very festive dessert.

30 lgmarshmallows

1/2 ccrème de menthe

1 ptwhipping cream (whipped)

1graham cracker crust or chocolate cookie crust
How To Make luck of the irish creme de menthe pie

1Melt marshmallows in the microwave. Cool slightly.

2Add Crème de Menthe to marshmallows and fold in whipped cream.

3Put in the cookie or graham cracker crust.

4Chill overnight or at least 2 hours.

5NOTE 1: Don’t be tempted to put in more than 1/2 cup Creme de Menthe. If you do it will be too liquidly and it won’t set up good.

6NOTE 2: To make this non-alcoholic, replace the Crème de Menthe with 1-1/2 to 2 teaspoons (taste after adding 1-1/2 teaspoons) of peppermint or spearmint extract to the unwhipped whipping cream.
