Ingredients For lemon pie

3/4 csugar

2 Tbspcornstarch

2 Tbspflour

3/4 cboiling water

2eggs yolk, save whites for meringue

1 tspbutter

1lemon zest, grated

3 Tbsplemon juice
- MERINGUE:

4egg whites, stiffly beaten to form peaks

1/2 csugar
-
1pie crust shell, baked
How To Make lemon pie

1FOR PIE: Mix cornstarch,sugar and flour and pour boiling water over this. Stir and cook unil thick.

2Add egg yolks,butter, lemon juice and zest. Cook until egg thckens. Placed in as baked pie crust.

3FOR MERINGUE: Preheat oven to 400 degrees. Beat egg whites until they are stiff and form high peaks. Slowly add sugaar.Beat at medium speed for about 1 minute.

4Immediately spread meringue over pie, carefully sealing to edge of pastry to prevent shrinkage of meringue. Bake at 400 degrees for about 10 minutes until peaks are browned.
