My mother made one of these pies most Saturdays, as it was one of my dad’s favorites. So easy! Key lime juice can also be substituted for the lemon juice.

    lemons
  • 8 oz
    cream cheese
  • 1 can
    eagle brand sweetened condensed milk (14 oz)
  • 1 tsp
    white vanilla
  • 8 oz
    whipped topping (like Cool Whip)

    graham cracker pie crust

How To Make lemon icebox pie

    Juice the lemons and set juice aside.

    Microwave the cream cheese in a large bowl for 45 seconds.

    Add the lemon juice, sweetened condensed milk, and vanilla to the cream cheese. Stir until smooth.

    Fold in the whipped topping until well blended.

    Pour into the pie shell.

    Refrigerate for at least two hours.
