This adaptation comes from a recipe in a little booklet entitled "Peyton Presents Some Sweet Ideas." Peyton Zieger was a very creative cook and delighted in coming up with new recipes using sweet potatoes. She also wrote a food column in one of our local papers. Everyone loves this yummy sweet potato pie! Since Peyton encouraged us to experiment with recipes I tweaked this one just a wee bit! I believe you will find it a delightful and much requested pie...so just enjoy! p.s. Baking the sweet potatoes ahead makes this really quick to make!

Ingredients For it's possible sweet potato pie

1 1/2 csweet potatoes - cold, cooked, mashed

1/2 csour cream

113 ounce can evaporated milk

1/4 cbrown sugar

1/2 cgranulated sugar

1/4 tspsalt
-
2 Tbspbutter, melted
-
1 tspvanilla
-
2eggs, beaten
-
1/2 cbiscuit mix
-
1 tspapple or pumpkin pie spice
-
1/2 tspcinnamon
-
1/4 tspginger
-
1 Tbsplemon juice
-
1 tspwhiskey
- TOPPING:

1/4 cbrown sugar
-
1/2 cpecans, chopped
-
2 Tbspbutter, melted
-
1 Tbspflour
-
1/8 tspcinnamon
-
1/4 cflaked coconut
How To Make it's possible sweet potato pie

1In a large bowl, combine all the pie ingredients above by mixing at medium or high speed for 2 minutes. In a small bowl, mix all the topping ingredients together and set aside until ready to use.

2Pour into two well greased 8 or 9-inch pie pans. This makes its own pie crust---amazing!

3Bake in preheated 350 degree oven (325 degree if using glass pie plates) for about a total of 45 minutes or until knife inserted in center comes out clean.

4After 35 minutes, spoon the topping around the outside edge - about an inch or so in from crust edge. Return to over to finish baking.

5Cool on wire rack. Serve with whipped cream to which a pinch or two of nutmeg has been folded in for another layer of taste surprise.
