Quiche is a great way to serve something elegant that costs very little and is easy to prepare. I experiment with fillings. This is one experiment that worked.

This is one yummy quiche with tons of flavor. The Italian seasoning goes great with the mozzarella and Parmesan cheeses. Chunks of meat and asparagus make this a hearty quiche. It's simple to make and will be a delicious holiday breakfast or brunch.

    9-inch pie crust, homemade or store-bought
  • 1/2
    pepperoni stick, sliced and cut up into small pieces
  • 1/2 box
    frozen asparagus or about 1 cup leftover cooked asparagus, cut into 1-2 inch pieces
  • 3/4 c
    finely shredded mozzarella
  • 1/2 c
    finely shredded Parmesan
  • 4 lg
    eggs
  • 1 1/2 c
    half and half
  • 1 tsp
    Italian spice blend

Make sure the asparagus is blotted well. If you can't find whole pepperoni (we had an issue), hard salami diced up (about 1/3 cup) is a great substitute and still adds an Italian feel.
  • Oven preheating.

    Heat oven to 400 degrees F.
  • Drying the asparagus.

    If using frozen asparagus, defrost and use paper towels to remove excess moisture.
  • Pepperoni and asparagus in the crust.

    Sprinkle the asparagus and pepperoni pieces over the bottom of the pie crust.
  • Cheese sprinkled over the asparagus and meat.

    Top with the shredded cheeses.
  • Adding cream to spices and eggs.

    In a medium bowl, beat the eggs with a whisk until a bit foamy. Stir in the half and half and the Italian spices.
  • Pouring egg mixture into crust.

    Pour the egg mixture over the filling. Be sure that no part of the cheese is sticking out too high.
  • Quiche baking in the oven.

    Place in oven on the middle rack. Turn the temperature down to 350 degrees F and bake 30-45 minutes until set. The knife should come out clean if stuck in the middle.
