This recipe was actually given to me by my sister many many years ago. The only name she gave it was 'impossible pie' I like to think of it as 'Roberta's Impossible Pie' I believe she would have liked that! I hope others will enjoy this as much as my family does!

Ingredients For roberta's impossible pie

4 lgeggs

1/4 cmargarine

1/2 call purpose flour

2 crich milk (whole milk or table cream)

1 ccoconut, flaked

1 cwhite sugar

2 tsppure vanilla extract
How To Make roberta's impossible pie

1Blend all ingredients in blender for a few minutes until well blended together. Pour into a deep 10 inch greased pie plate.

2Bake at 350 degrees for about 1 hour or until centre tests firm.

3Please Note, the flour will settle to form the crust, the coconut forms the topping, and the centre is an egg custard filling.
