This recipe is one my great grandma made for family reunions. We have all come to love it. I use graham cracker crust, but great grandma pressed crumbs into the pan, so feel free to do that.

Ingredients For icebox cake

1 cpineapple juice

1/2 capricot nectar or nectar of choice

36 - 40marshmallows, regular sized

1 cwhipping cream, whipped

110-inch graham cracker pie crust

graham crackers, crushed
How To Make icebox cake

1Over medium-low heat, melt together the marshmallows with pineapple juice and apricot nectar; gently stir constantly. Do not boil.

2Cool mixture completely. Stir every 5 minutes until mixture cools to prevent a skin from developing.

3Fold whipped cream into the cooled marshmallow mixture.

4Pour into crust.

5Chill for at least 2 hours.

6Top with crushed graham crackers right before serving.
