While I was on travel a friend introduced me to this wonderful low calorie sweet healthy treat. It is delicious. She put a lattice pie crust on the top and it looked just like an apple pie. I thought of how I could make this healthier and decided to use an oatmeal honey crumble top. It is quick and easy, and sure to make your kids happy.

I used granny smith apples. Take a knife and slice off the top of the apple and using a potatoes peeler work it around the core but not piercing through the bottom and cut out the core. Using a melon ball scooper but you can use a knife, remove the inside of the apple being careful not to pierce through the skin.

Take the apple that you took out and chop it into pieces as close to the same size as possible. Put into a medium sized bowl and add the dried cranberries, raisins and nuts. Stir in one teaspoon cinnamon and 1/4 cup of brown sugar. Make sure it is well combined and stuff the apple shell with the mixture.

Mix together the oatmeal 1/4 cup of brown sugar 1 teaspoon of cinnamon and 3 teaspoons of honey till it is crumbly. Top the apples with the mixture.

Bake for 20-25 minutes depending on the size of your apples. Remove and let cool. If you do not like the skin you can just pull it away. You can also substitute any fruit with the apples you wish to stuff your apple. Enjoy.
