granny schaffer's pecan pie

This pie is not like your traditional pecan pie. It has a creamy, almost caramel like filling. Cut small pieces..it's very rich and indulgent. I've never found this pie offered anywhere except at "Granny Schaffers" restaurant in Webb City Missouri. I have looked and looked and looked for a recipe for it with absolute NO luck whatsoever. Our "old folks" don't even know about it except that it has been offered at Schaffers for as long as they can remember. After Mrs. Schaffer passed away, they published the recipe in a cookbook of her recipes..and I'm now pleased to share it here.

Ingredients For granny schaffer's pecan pie

  • 1
    9" pie crust
  • 1 c
    pecans - chopped
  • 3
    egg yolks
  • 1/2 c
    sugar
  • 3 Tbsp
    four
  • 14 oz
    sweetened condensed milk
  • 3/4 c
    water
  • 1 tsp
    vanilla

How To Make granny schaffer's pecan pie

    Preheat oven to 350 degrees Bake pie shell 10 min.

    Roast pecans in oven till fragrant

    Beat egg yolks with sugar and flour at medium speed w/hand mixer till thick and pale. Beat in sweetened cond.milk, water and vanilla

    Cook on low heat stirring constantly till thick and pudding like. ~or~ can use microwave for this part..it works just fine. Microwave 5 1/2 min. Stir halfway thru..should be thick & pudding like

    Add pecans Spoon into pie shell and cool 20 min.
