This is one of two Graham Cracker Pie recipes found in a 1967 edition of "Our Favorite Desserts" from the "Favorites From Home Economics Teacher" cookbook series. This recipe was submitted by Homoiselle House from Hempstead High School of Hempstead, Texas. I am posting these in response to a request, but I have not made either of them.

Ingredients For graham cracker pie i

  • 3/4 c
    brown sugar
  • 1/2 c
    sugar, white, granulated
  • 1 Tbsp
    all purpose flour
  • 1 c
    milk
  • 3
    egg yolks, reserve whites
  • 3 Tbsp
    butter
  • 1 c
    graham crackers, crushed
  • 1 tsp
    vanilla
  • MERINGUE
  • 3
    egg whites
  • 6 Tbsp
    sugar

How To Make graham cracker pie i

    In a saucepan combine both sugars, flour and milk. Add slightly beaten egg yolks to mixture in saucepan. Place saucepan over heat and bring to boil. Add butter and cracker crumbs.

    Cook mixture until thick, remove from heat, add vanilla. Pour thickened mixture into a 9-inch prebaked pie shell.

    MERINGUE: Beat egg whites until stiff, add sugar 2 Tablespoons at a time, continuing to beat until sugar has been incorporated and you can no longer feel sugar grains when you rub a small bit of meringue between your finger and thumb. Top pie filling with meringue. Bake meringue in 350° oven until lightly browned.
