This fruit pizza is a delicious summer dessert. It's light and refreshing. The cookie "crust" is sweet and buttery and just melts in your mouth. The cream cheese "sauce' is creamy, tangy, and a tad sweet. You could even add a little bit of lemon juice to the cream cheese mixture for an added punch of flavor. Once decorated, all the colorful fruit make for a beautiful presentation. Serve this with brunch or for dessert. It's delish!

Ingredients For fruit pizza
- COOKIE CRUST

1/2 cbutter, room temperature
-
1/4 cshortening
-
3/4 csugar
-
1/4 tspsalt
-
1 1/3 call-purpose flour
-
1 tspcream of tartar
-
1/2 tspbaking soda
-
1egg
- TOPPING
-
8 oz pkgcream cheese, room temperature

1/2 csugar
-
1 cjuice drained from canned fruit
-
2 Tbspcorn starch
-
your favorite chunked fruit {pineapple, bananas, strawberries, peaches, etc}

1 canfruit cocktail, canned (14.5 oz)
How To Make fruit pizza

1Combine butter, shortening, and sugar. Add egg and mix well.

2Add dry ingredients.

3Spread on a greased cookie sheet. Bake at 400 degree for 8-10 minutes and cool.

4Mix cream cheese with 1/2 cup sugar. Spread on cooled crust.

5Drain fruit and add juice to a saucepan. Combine juice with corn starch and cook until thick. Add fruit cocktail.

6Place fruit cocktail and any other desired fruit on top of the cream cheese. Refrigerate 2 hrs before serving.
