I created a fifth sweet potato pie recipe with a twist of French vanilla. It's in the style of a double layer pumpkin pie, with a new French vanilla filling on the bottom of the crust.

  • 1 c
    heavy cream
  • 1
    packet instant French vanilla pudding mix
  • 8 oz
    cream cheese, softened
  • 4 Tbsp
    French vanilla liquid creamer
  • 1
    unbaked pie crust (9 inch)
  • 1 c
    vanilla chips
  • 3
    sweet potatoes
  • 2 Tbsp
    margarine
  • 1 c
    cane sugar
  • 3/4 c
    fat free milk
  • 2 tsp
    pure vanilla extract

How To Make french vanilla sweet potato pie

    In a medium bowl, combine the heavy cream, pudding mix, cream cheese and liquid creamer; whisk together until blended.

    Spread into bottom of the pie crust. Sprinkle with vanilla chips. Refrigerate for 4 hours.

    Preheat oven to 375 degrees F.

    Bring a large saucepan of water to boil, add the sweet potatoes and boil for 30 minutes. Drain well and peel them.

    Place in a large bowl and mash with a potato masher until the lumps are gone.

    Add the margarine, sugar, milk and vanilla extract to the mashed sweet potatoes. Beat with a fork until combined.

    Spoon into a prepared pie crust.

    Bake for 25 minutes or until the pie is set. Cool completely.
