eloise's pecan pie

This recipe was my mother in law's recipe. It is not your typical pecan pie in that you do not use syrup in it. It is so good though! She passed away suddenly in 2006 and I have been asked, by my husband & his siblings, to bake this pie every Thanksgiving & Christmas. It is an honor to do so. I think about my sweet mother in law each time! Enjoy!

Ingredients For eloise's pecan pie

1/2 csoftened butter

1 csugar
-
1 tspvanilla flavoring

1 cchopped pecans

2eggs, whites separated from yolks

1unbaked pie shell
How To Make eloise's pecan pie

1Preheat oven to 350 degrees

2Cream butter & sugar together.

3Add vanilla & egg yolks.

4Stir in pecans.

5In separate bowl, beat egg whites until stiff.

6Fold whites into other mixture.

7Pour into unbaked pie shell & bake about 45 minutes.
