1prebaked 9" pie shell

1 Tbspcorn starch

1 16oz canunsweetened red cherries

1/4 tspalmond extract

1 cliquid from the cherries

1/2 csplenda/sugar blend
-
1/2 cnon fat dry milk

1 Tbspsplenda/sugar blend
-
1/2 cice water
-
1/8 csplenda/sugar blend

2 Tbspfresh lemon juice
-
1/2 tspvanilla extract
How To Make diabetic cherry pie & whipped topping

1Pie: Drain cherries well, reserving 1 cup liquid.

2Set cherries aside and combine 1 cup liquid and cornstarch.

3Cook and stir over moderate heat until thickened and transparent and the starchy taste is gone.

4Remove from heat and add splenda blend, almond extract and cherries.

5Cool to room temperature.

6Spread filling evenly in crust.

7Let set at least 1 hour.

8Topping: Combine dry milk and water.

9Beat at high speed for 4 minutes.

10Add lemon juice to whipped milk
-
11Beat at high speed for 4 minutes.

12Add the splenda blend while it is being beaten.

13Add vanilla
-
14refrigerate until ready to serve

15Just before serving, spread whipped topping on pie.
